Chicken and Dumplings

This is a great version of a traditional dinner!

1-2 tablespoons olive oil
1 onion, minced
2-3 cloves garlic, minced or pressed
6 cups chicken broth
1 pound cooked chicken, cut into bite-size pieces
1 bay leaf
1/2 teaspoon basil
1 cup sliced carrots
2 ribs celery, chopped
1 handful of chopped fresh parsley (or 1 tablespoon dried parsley)
1 (12-oz) can evaporated milk (fat-free is fine)
1 recipe Bisquick biscuit dough

1. Combine all ingredients except for evaporated milk and dumplings in crock pot, and cook on low for 6-8 hours or on high 3-4 hours or until carrots are tender. Turn heat to high and add dumplings and continue cooking until the dumplings are cooked through.
